Ingredients:
- 30g quinoa
- 1/2 aubergine
- 1/2 courgette
- Juice of 1/2 lemon
- A handful of cherry tomatoes
- 30g Feta cheese
- A pinch of mint leaves
- 30g 藜⻨
- 1/2 茄⼦
- 1/2 西葫芦
- 1/2 柠檬的汁
- 1把 ⼩番茄
- 30g ⽺奶酪
- 少许 薄荷叶
Instructions:
Preheat the oven to 160°C.
Place the aubergine and courgette sticks on a baking tray and put them in the oven for 12 minutes.
Meanwhile, if you prefer to have hot quinoa – cut a small corner of the cooked quinoa bag and place it in the microwave for 2 minutes. Otherwise, enjoy it cold.
Once the vegetables are roasted, place them and the quinoa in a bowl, add cherry tomatoes, sprinkle with lemon juice, and feta cheese. Garnish with mint leaves, and enjoy.
烤箱预热180℃。
把切好的茄子和西葫芦放到烤盘上,放⼊烤箱烤12分钟。
如果你喜欢吃热的藜麦,那么把已经煮好的装藜麦的袋子剪个小角,放在微波炉里打2分钟。不过冷的也一样好吃。
蔬菜烤好以后,把藜麦放在蔬菜放到一个碗里,加上小番茄,撒上柠檬汁和羊奶酪。点缀一些薄荷叶即可享用。
